If you like your cookies soft in the center and crisp and chewy on the outside, then this cookie will make you very happy. The oats and raisins add great texture and taste. There is a little something that says breakfast about these cookies, mainly because of the oats, but this also makes the perfect bite when you desperately need a coffee and a biscuit. This recipe is from Sarah Kieffer, who is considered a cookie expert.
Raisins are one of the main ingredients in this cookie but what works equally well is a fruit cake mix. Raisins are in a fruit mix anyway, as well as sultanas and dried peel. The dried mix adds hint of citrus which results in a very pleasing taste.
Ingredients for Cookies (makes 20 cookies)
- 170 g butter
- 150 g brown sugar
- 100 g granulated sugar
- 1 egg
- 190 g cake flour
- 3/4 tsp bicarbonate of soda
- 3/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 2 tsp vanilla extract
- 150 g rolled oats
- 105 g raisins or dried fruit-cake mix
Method to make Cookies
- Preheat oven to 180 degrees celsius.
- Line 2 or 3 baking sheet pans with parchment paper.
- In a medium sized bowl, measure out cake flour, baking soda, cinnamon, nutmeg and salt. Whisk to lightly combine.
- In another mixing bowl, add butter and beat with an electric beater or stand mixer till soft and creamy.
- Add sugars and continue to beat until light and fluffy.
- Add egg and vanilla and continue beating till well mixed.
- Add the flour mixture and beat on low till just combined.
- Add oats and raisins and mix with a large metal spoon till all ingredients are well combined and evenly distributed.
- Form balls with about 2 tablespoons of cookie dough and place on baking sheet, evenly spaced.
- Bake 8 cookies at a time for 12 to 14 minutes.
- Rotate the baking tray halfway during the baking time.
- Bake until the edges are light golden brown and the centers are still pale, looking a little undercooked.
- Before removing cookies from the oven, give the sheet a slight bang on the rack.
- Leave cookies for about 5 minutes on tray before transferring to a wire rack to completely cool.
