If you like crisp, buttery, textured cookies, then this cookie ticks all the boxes. The addition of the crushed cornflakes takes the crispiness to another level. There is the added flavour of the chocolate, sultanas, walnuts and citrus. This is a cookie packed with flavour and texture.
Ingredients for Cookies
- 60 g dark chocolate chips or chopped chocolate
- 60 g golden sultanas
- 30 g roughly chopped walnuts
- 1 tsp orange zest
- 125 g butter
- 80 g caster sugar
- 1 egg
- 125 g self-raising flour
- 80 g lightly crushed cornflakes
- 80 g dark chocolate, melted
Method to make Cookies
- Preheat oven to 180 degrees celsius.
- Line 2 baking sheets with parchment paper.
- Combine chocolate chips, sultanas, chopped walnuts and orange zest in a small bowl.
- In another bowl, beat butter and sugar with an electric beater, till light and fluffy.
- Add egg and beat well.
- Add flour and lightly mix.
- Finally add the sultana mixture and lightly mix till well combined.
- Place crushed cornflakes on a flat plate.
- Roll about a tablespoon and a half of the cookie dough in the the crushed cornflakes to coat the cookie.
- Place balls on baking sheet about 10 cm apart.
- Bake for 15 minutes till golden brown and crisp.
- Leave to cool on tray for 10 minutes before transferring onto a wire rack to completely cool.
- Melt chocolate and drizzle over cooled cookies.
