This loaf is part bread and part cake. Perfect with a cup of tea or delicious as an accompaniment with a hot bowl of soup. The sweetcorn adds flavour and moistness to this loaf. Polenta can also be used in place of the mealie meal. The recipe can be made using a whisk or electric beaters.

Ingredients for loaf
- 125 g butter melted
- 75 g sugar
- 3 eggs
- 280 g white bread flour
- 15 ml baking powder
- 3 ml salt
- 80 g maize meal/polenta
- 410 g can of cream-style corn
- 125 ml milk
Method to make loaf
- Pre-heat oven to 180 degrees celsius.
- Grease and line the bottom of a 23 cm loaf pan.
- Beat melted butter and sugar with an electric beater or whisk.
- Add eggs one at a time and beat or whisk well until the mixture is light and fluffy.
- Sift flour, baking powder and salt and add to the butter mixture.
- Mix ingredients together.
- Add maize meal/polenta, sweetcorn and milk and mix well.
- Turn mixture into prepared loaf pan.
- Bake for 50 – 55 minutes until loaf is well risen, light golden and coming away from the sides of the pan.
- Cool for a few minutes before turning out onto a wire rack to completely cool.
